The Berghoff
– according to Dennis McCarthy in his book, The Great Chicago Bar & Saloon Guide (1985), "During Prohibition the Berghoff family did a very un-Chicago-like thing. They did not run a speakeasy. Their brewery made beer and extracted the alcohol from it. Maybe that spurred their history of excellent, reasonably priced food."
